Aged cheese with semi-cooked paste made from whole, pasteurized cow's milk. Produced in cylindrical blocks with a light brown crust. The yellow paste is evenly peppered with tiny holes. It has an intense, persistent flavor, slightly savory and full. It lends itself to prolonged aging.
